Ingredients

1 hr 30 min
  1. 240 gself-raising flour
  2. 150 gunsalted butter
  3. 190 gcaster sugar
  4. 50 gfull fat natural Greek yogurt
  5. 3large eggs
  6. 2large mandarins
  7. 1 handfuldried cranberries
  8. Icing sugar for decoration
  9. Oil to oil the baking mould

Cooking Instructions

    Wash and zest mandarins. Peel skin and walls off

  2. 2

    Soak cranberry in hot water for 10 min and dry on a kitchen towel

  3. 3

    Whisk soft butter with caster sugar until it fluffs and becomes light in colour

  4. 4

    One by one add eggs and yogurt and whisk until well blended.

  5. 5

    Add zest and mandarins, flour and cranberries. Give it a good mix and put into a slightly oiled mould.

    Bake at 180°C for 50-60 min or until toothpick comes dry and clean out of the middle of the cake

  7. 7

    Remove from a mould on a grid. Let it cool and powder with icing sugar.
