Ingredients

About 400ml

2Eggs
2Egg Yolks
3/4 cupCaster Sugar *OR 1 cup for sweeter curd
100 gButter *cut into small cubes
1/2 cupLemon Juice *You would need 3 to 4 Lemons
Zest of 1 Lemon *finely grated

Steps

Whisk Eggs and Egg Yolks with Sugar in a saucepan until smooth. Add Butter, Lemon Juice and finely grated Zest, and whisk over low heat until the mixture thickens.

Transfer to sterilised jars and store in the fridge.
