In a bowl, combine a generous tablespoon of homemade mayonnaise, 1 teaspoon of mustard, 1 teaspoon of ketchup, a few drops of Tabasco and Worcestershire sauce. Season with salt and pepper, taste, and chill in the refrigerator.

Add 1 teaspoon each of chopped parsley, chopped onion, and chopped capers to the ground beef. Mix everything together, shape into a patty, make a small indentation in the center, and place the fresh egg yolk on top.

You can mix a spoonful of the sauce into the steak or serve the sauce on the side, as well as the other steak ingredients separately. Serve with French fries.
