I love poached eggs, even if my photos of them turn out a bit strange, but I like them! Happy me, happy everyone. Since I've been in Spain, I always have avocados at home, so I came up with this little recipe.

I love poached eggs, even if my photos of them turn out a bit strange, but I like them! Happy me, happy everyone. Since I've been in Spain, I always have avocados at home, so I came up with this little recipe.

First, prepare the shrimp. I used frozen ones, so I thawed the desired amount, then cooked them in a small pot of boiling salted water, adding a clove of garlic!

While the shrimp are cooking, make the quick guacamole. Take an avocado, peel it, place it in a bowl, and immediately sprinkle it with lemon juice to prevent browning. Start mashing and mixing it with a fork. Season with salt and pepper to taste.

Now, let's focus on the egg. Bring water to a boil in a small pot with high sides. Let it boil vigorously and add a splash of vinegar. Create a whirlpool by stirring the water in the pot with a fork, then quickly pour the egg, previously cracked and placed in a small cup, into the whirlpool. After about 3 minutes, remove the egg with a slotted spoon and place it on the already prepared plate.

I assembled the plate with a layer of lettuce, a layer of guacamole, and a layer of shrimp. On top, I placed the poached egg and seasoned with oil, salt, and pepper.
