Ingredients

  • 150 gmKabuli Chana(Chickpeas)(soaked overnight)
  • 4Whole spices: gol mirch (pepper kernels)
  • 1dalchini stick (cinnamon stick)
  • 1tej patta (bay leaf)
  • 1tea bag or take tea in a small piece of muslin cloth & tie it
  • 1/4 tbspBaking Soda
  • 400ml- 500ml water
  • 2medium size onion (finely chopped)
  • 1big size tomato (finely chopped)
  • 2 inch ginger (finely chopped)
  • 1 inch ginger (cut in juliennes)
  • 1-2green chilli (chopped)
  • 2 tbspdhaniya powder
  • 1 1/2 tspChole masala
  • 1 tsp Kashmiri red chilli powder
  • 1/2 tsp Anardana
  • 2 tbspncurd
  • as per taste Salt
  • 10-15mint leaves
  • As required Coriander leaves for garnish

    In a pressure cooker put soaked chole, whole spices, tea bag, salt, baking soda and 500ml water.

    Pressure cook the chole for minutes in low flame till soft. Open the cooker and check the chole. It should easily mash if pressed between finger. DO NOT THROW AWAY THE WATER. Keep the chole aside as it is.

    In a kadhai heat 2 tbspn oil or ghee. Add chopped onion and saute till it becomes golden brown. Now add finely chopped ginger and green chilllies. Saute a bit and add tomatoes.

    Add salt and saute for sometime. When tomatoes softened add the spices, chole masala, dhaniya powder and kashmiri red chilli powder. Mix well.

    Now add anardana, 2tbspn curd and chopped mint leaves. Mix well.

    Add boiled Chole, which we had kept aside. Cook for sometime till the chole gets ninely cooked in the spice gravy. Let it simmer for sometime.

    Garnish with fresh coriander leaves and ginger juliennes. Serve hot with Kulchas
