Amritsari Chole ~ A triditional dish from the State of Punjab, is a chickpea curry packed with great flavours! It is usually served with Kulchas, but one can enjoy eating with bhatura, naan , roti and rice.
Follow these easy steps to make this mouthwatering dish.
Steps

In a pressure cooker put soaked chole, whole spices, tea bag, salt, baking soda and 500ml water.

Pressure cook the chole for minutes in low flame till soft. Open the cooker and check the chole. It should easily mash if pressed between finger. DO NOT THROW AWAY THE WATER. Keep the chole aside as it is.

In a kadhai heat 2 tbspn oil or ghee. Add chopped onion and saute till it becomes golden brown. Now add finely chopped ginger and green chilllies. Saute a bit and add tomatoes.

Add salt and saute for sometime. When tomatoes softened add the spices, chole masala, dhaniya powder and kashmiri red chilli powder. Mix well.

Now add anardana, 2tbspn curd and chopped mint leaves. Mix well.

Add boiled Chole, which we had kept aside. Cook for sometime till the chole gets ninely cooked in the spice gravy. Let it simmer for sometime.

Garnish with fresh coriander leaves and ginger juliennes. Serve hot with Kulchas
