In a medium size bowl, combine your dry ingredients, flour, baking powder,sugar, lemon rind, nutmeg, salt.

In a separate bowl, whisk together milk, eggs and vanilla. Add butter last, mix.

Form a well in the centre of your dry ingredients, and add the milk mixture. Whisk until just fully combined, do not overmix or they won't be as fluffy.

Lightly oil your pan(on medium-low heat) and ladle in your pancake mix, depending on what size pancakes you want. The batter will be abit light so no need to spread it out.

When all the bubbles on the top of the pancake pop, its ready to flip:) cook for about 2 minutes more and its done. Repeat with the rest of your batter. Top with some syrup and they're ready:)
