I've been living in Mexico for almost 5 years and still hadn't tried birria—can you believe it? That couldn't go on 😜 so I decided to make it myself at home. I based it on @Cynthia Serena's recipe with a few small changes. And what can I say? I loved it!!! I'll definitely make it again!

Roast the tomatoes, onion, and garlic. Meanwhile, soak the chiles in hot water until soft. Remove the seeds and stems.

Blend the chiles with the roasted tomatoes, onion, and garlic. Add all the spices: oregano, thyme, cloves, cinnamon, and cumin. Place the beef in the mixture and let it marinate for 1 hour. Then transfer everything to a pressure cooker and add 1 cup of water (240 ml) or more as needed to fully cover the meat. Add the bay leaves. Cook for about 30 to 45 minutes. Check if the meat is tender; if not, cook a few minutes longer.

Shred the meat while it's still hot. Mix it with the sauce and cook for a few more minutes on the stove. If too much liquid has evaporated during cooking, add more water so it has a broth-like consistency instead of a thick sauce.

Serve with tortillas, lime wedges, chopped cilantro, and chopped onion.
