Ingredients

11-inch (28 cm) bundt pan
  • 2 2/3 cupsall-purpose flour (about 330 grams)
  • 1 1/4 cupssugar (about 250 grams)
  • 4eggs
  • 3/4 cupplain yogurt (about 170 grams)
  • 3/4 cupvegetable oil (about 170 grams)
  • Grated zest of 1 lemon
  • 1 teaspoonvanilla extract
  • 1 packetbaking powder (about 2 1/2 teaspoons, 16 grams)

Steps

  1. 1

    Beat the eggs and sugar very well with a hand mixer or stand mixer for about 15 minutes, until light and fluffy.

  2. 2

    Mix in the yogurt, oil, lemon zest, and vanilla extract.

  3. 3

    Sift the flour with the baking powder, then add them to the batter and mix until just combined.

  4. 4

    Grease and flour a 11-inch (28 cm) bundt pan. Pour in the batter and bake in a preheated oven at 350°F (180°C) for 45–50 minutes. Check doneness with a toothpick—if it comes out clean, the cake is ready.

  5. 5

    TIP: You can substitute the plain yogurt with other flavors—have fun creating your favorite version.
