I would like to thank Ms.Maria Emmanuel for her so amazing and delicious recipe of long beans and potato curry. I made also long beans and potato curry with mustard paste which is a traditional recipe of our family, that I learnt from my mother.

Steps

Wash and chop barbati and potato to 1 inch length. Add turmeric powder and salt and cook in a microwave safe bowl for 5 minutes.

Heat oil in a kadhai. Add Panch phutan and allow to splutter. Add chopped onion and green chilli. Saute till onions are translucent.

Mix the mustard paste chopped tomatoes and cumin powder. Saute till tomatoes are soft.

Mix the boiled veggies with the mustard paste. Cook covered on low heat till semi dry. Serve with hot roti and/or steamed rice.
