Lebanese Kibbeh

Kibbeh is a traditional dish from Lebanon and Syria, though it's very common throughout the Middle East. It's usually made with minced lamb, but this time I decided to make the beef version.

Cooking Instructions

Start by cleaning the bulgur with water and hydrating it. Place it in a strainer and rinse with water. Then put it in a bowl with a little water for 30 minutes to hydrate. The bulgur will absorb the water and increase in size.

While the bulgur is hydrating, start making the filling. In a pan, sauté the diced onion. Add half of the ground beef, the tablespoon of tomato sauce, and season with spices.

⚠️ The amount of spices can vary to taste. I used: 1 teaspoon cardamom, 2 teaspoons turmeric, 4 teaspoons cumin, 2 teaspoons nutmeg, 1 teaspoon ground cinnamon, 3 teaspoons ginger, 1 teaspoon lemongrass, a couple of mint leaves, salt, and pepper.

Add 1/2 diced apple and chopped nuts.

When the bulgur has absorbed the water, add the other half of the ground beef and spices (3 teaspoons pepper, a pinch of salt, 3 teaspoons cumin, 1 teaspoon nutmeg, and 2 teaspoons ground ginger).

Proceed to make the balls. With the raw mixture, make a ball, create a hole, and fill it with the meat from the pan. Close it, forming an elongated shape.

Finally, fry the Kibbeh and they will be ready to enjoy.
