Steps

Place the Eggplant with its crest on the grillpan on medium flame. Grill and turning sides occasionally for 40 mins. Once you have the char, set aside to cool for about 5 mins

Peel the skin with your hand if tolerably cool and chop the eggplant into small pieces. Add to a blender

In a separate bowl add Extra Virgin olive oil and garlic cloves and make garlic confit on low-medium flame.

Once the garlic cloves are a little brown strain from the olive oil and set both aside.

Add the garlic and the oil or rather garlic confit to the blender where the eggplant is, add tahini, add lime juice, salt and run the blender smooth. Set aside to plate

Add to a bowl, garnish with pomegranate seeds, cherry tomatoes, tomatoes, coriander leaves and enjoy on its own or with Pita Bread or Nachos or Crackers
