Heat the milk, then remove from heat and add the cream and sugar. Stir in the egg yolks. Gently heat the mixture again (do not let it boil), then pour into small individual ramekins.

Place the ramekins in a water bath and bake at 350°F (180°C) for about 50 minutes.

Let cool, then sprinkle brown sugar on top and caramelize it with a kitchen torch.
