I love Mathris and making with Spinach-Mint was a great one deviating from the usual kind. I fried and didn’t bake but I used olive oil to mix into the Flour
Steps

First in a bowl clean spinach, mint and discard the stems. Chop spinach fine and add to blende, add mint, green chilies, garlic cloves and run the blender smooth to make a purée. Set aside

In a bowl add White flour, Whole wheat flour, carrom seeds, black pepper powder, salt and mix well. Add olive oil to coat the flours well.

Add the purée to it and mix to make a dough without adding water.

Cover with a cling film or muslin cloth for 10 mins

Roll out with a rolling pin and take a cookie cutter and make desired shapes. With a fork make marks all across, complete the batches and set aside

In a wok heat oil but when hot reduce the flame to low and gently fry the Mathris. Don’t turn the sides very quickly as it takes time to fry. Complete the batches

Plate with Tea as Mathri & Tea are inseparable and enjoy!
