Tiranga phirni/Tricolour phirni receipe :

Phirni is a very simple dessert or rice pudding which can be prepared in a jiffy. This is prepared using Basmati rice.However you can also use sona masuri rice.Here I have made a slight variation to the traditional phirni recipe.
First we are going to prepare the plain phirni and then enhance the plain phirni with different flavours.

Ingredients

  1. 1 cupBasmati rice
  2. 1 litrefull fat milk
  3. 1/2 cupsugar
  4. 1 tspRose water
  5. 1 tspcardamom powder
  6. 1/4 cupgrated carrot
  7. 1/4 cupalmond powder
  8. 1/4 cuppista powder
  9. 1 tspalmond essence
  10. 1 tsppistachio essence
  11. as requiredRose petals,almonds,pistachios, kesar for garnish

Steps

30 minutes
  1. 1

    Plain phirni preparation:
    1.Soak 1 cup Basmati rice in water for 20-30minutes.
    2.Coarsely Grind the rice by adding little water.
    3.In a kadai, Boil 1 litre of full fat milk.Stir occasionally on low flame until the milk thickens.
    4.Add the coarsely ground rice mixture.Stir continuosly to avoid formation of lumps.
    Boil the milk until the rice is cooked.
    5. Finally add 1/2 cup sugar,rose water and cardamom powder.

    For the tiranga/ tricolour phirni
    First layer- Carrot phirni:
    1.Take 4 tsps of the plain phirni in a small saucepan.
    2.Add grated carrot,little sugar and milk and cook it until the carrot is completely cooked.
    3.Add saffron strands and keep it to cool.

    Second Layer - Almond phirni:
    1.Take 4 tsp of plain phirni in a saucepan.
    Add almond paste(Grind Almond powder with milk)
    2.Add little additional sugar, almond essence and chopped almonds and cook it for sometime.

    Third layer- Pistachio phirni:
    1.Take 4 tsp of plain phirni in a saucepan.Add pistachio paste(Grind pistachio and milk).

    2.Add little sugar,pistachio essence,chopped pistachios and cook it for sometime. I have added a drop of green food colour to enhance the colour. It is totally optional.

  6. 6

    To layer the phirni, you can take a glass.Add a tsp of each phirni starting from pistachio, almond and last carrot phirni.
    Garnish with saffron strands,almonds and pistachios.
    Tastes best when chilled.
