1.Soak 1 cup of Basmati rice for 20 minutes.
2. Take a pressure cooker, add 2 tsp of ghee. Then add the cloves,green cardamom, cinnamon, bayleaf and saute.

3.Add chopped onion and fry for sometime. Then add ginger garlic paste and saute.Add the mushrooms,salt and fry till it starts to leave its water.

4.Add chopped tomato,mint,green chilles,coriander leaves and saute.
After sometime, add the green peas and saute.
You can add any vegetable of your choice.5.Add the soaked Basmati rice and saute.

6.Add 1 cup thick coconut milk and 1.5 cup of water.Adjust the salt and add Garam masala powder(optional).
Do not skip adding coconut milk. Coconut milk makes the biryani very flavorful.
Cook for 3 whistles. - 5
7.Once cooled, fluff up the rice and garnish with roasted cashews.
Serve with raita or korma.
