Barnyard millet is a good source of fiber, low in glycemic index, gluten free and has a rich source of iron. It feels light on stomach and keeps you energetic.

When combined with fruits and vegetables it is becomes a complete meal and is ideal for the summer lunch or as in-between snack. I like to eat ir warm. This tastes good when refrigerated. So can be prepared in advance and be eaten

Its indeed a healthy recipe, and I assure you that you will like it for sure. Do try it once.

Ingredients

30 minutes
4 servings
  • 1 cupBarnyard millet
  • 3 cupswater
  • as per taste Himalayan pink salt
  • 1 tspoil
  • 1 tspmustard seeds
  • 1 tspcumin seeds
  • 1green chilli
  • 1 tsphing
  • leavesas required Curry
  • For Salad
  • 1tomato chopped
  • 1cucumber chopped
  • 1small onion chopped
  • 2 tbspRoasted peanuts
  • 2 tbsppomegranate seeds
  • 1small beetroot chopped
  • 1 tsptoasted sesame seeds
  • leavesAs required mint
  • as neededcoriander leaves
  • 1 tbspany sprouts(I used mung beans)
  • For Dressing
  • 1 tsplemon juice
  • 1 tspblack pepper powder

Steps

30 minutes
  1. 1

    Wash and soak barnyard millet for nearly 4 hours.
    Discard the water.

  2. 2

    Heat oil in a pan. Add mustard seeds, cumin seeds, green chillies, hing and curry leaves. Now add barnyard millet and roast it lightly. Add water salt and let it cook on medium flame until water dries up and the millet is cooked properly.

  3. 3

    Let it cool down to room temperature. In a mixing bowl add onions, tomatoes, beetroot, cucumber, roasted peanuts, sesame seeds, pomegranate seeds, chopped mint leaves and coriander leaves.

  4. 4

    Prepare dressing by mixing lemon juice with black pepper. Give it a quick mix and serve.
