Gather all the ingredients. Cut the paneer, onion, tomato, and bell pepper into small cubes. Finely chop the cilantro and mint leaves.

In a mixing bowl, add the mustard oil and Kashmiri red chili powder and mix. Add all the dry spices and dried fenugreek leaves, then mix again. Add the yogurt and chickpea flour and combine.

Add the paneer and chopped vegetables to the bowl and gently mix. Add the lemon juice and mix again.

Heat 1 tablespoon butter in a pan. Add the prepared paneer tikka mixture and stir. Cover and cook for 4-5 minutes. Meanwhile, heat a piece of charcoal on another burner.

Place a small bowl in the pan with the tikka mixture, put the hot charcoal in the bowl, drizzle a little ghee over the charcoal, and cover the pan so the tikka absorbs the smoky flavor.

For the sandwich: Spread butter on bread slices. Spread green chutney, add the tikka filling, and cover with another slice of bread.

Toast the sandwich on both sides with butter using a sandwich maker or a nonstick pan. Cut with a knife and serve with chutney and sauce.
