Chèvre, beet, and orange salad…

Sometimes simple is best, and this salad definitely qualifies. I forgot to add the walnuts before I took the pic, but don’t forget to add them to your salad. The nuts give it a nice crunch, pecans work great too. Fresh herbs like dill, mint, or basil are great additions to this salad. I didn’t have any on hand or I would have showered them all over. Adjust the amount of oil, vinegar, or cheese to your liking…Enjoy 😊

Cut the peel off the orange, then cube the orange and beets. Add to salad bowl.

Break up the fresh goat cheese to desired size. I like to keep the pieces kind of big.

Add olive oil, vinegar of choice, salt and fresh ground pepper.

Sprinkle on the walnuts or pecans, enjoy 😊
Tips
Costco sells Beetology organic cooked beets, and they make this a very convenient recipe. Just make sure to cut off any skin or tips that have been missed. Also I use organic when possible, but use what works best for you.
