Dak Galbi (Korean Spicy Chicken)
Cooking Instructions

Cut chicken to small pieces.

Mix all the sauce ingredients. Add 2/3 sauce to the chicken. Save the rest on a separate container. Put the chicken and sauce in fridge for 4+ hours or overnight for marination.

On the next day, cut cabbage to small pieces. Cut sweet potatoes to thick slices. Cut onions to thin strips.

Heat up a pan and add oil. Then add onions and cook until soft on medium/high heat. Add sweet potatoes and continue cooking for 5 minutes or till they start turning golden brown on the surface. Add cabbage and mix well.

Push all the veggies to the side of the pan and leave the center empty. Add marinated chicken to the center. Keep cooking the chicken in the center. When chicken is almost fully cooked, mix it with veggies.

Add the previous leftover spicy sauce to the pan and continue cooking for 3-5 minutes

Delicious Korean Spicy Chicken ready to serve.

(Optional) Add shredded mozzarella cheese on top before eating.

This is a rather simplified version of galbi-jjim that omits the onions and garlic that are usual and leaves the dish at its most basic. I would have added a grated apple to the sauce too if I had one, but alas someone ate the last apple. You can add carrots, daikon, and chestnuts too if you like, but I had to keep this simple.
