Deep-fried Chicken Wing Kara-age with My Secret Marinade

This is my way of deep-frying golden crispy chicken. The sauce is sweet and savoury. Sesame seeds add more good flavour to them.

Cook through in lower-temperature oil and finish in higher temperature oil for a crispy result. You can use mentsuyu sauce for the marinade but adjust the sugar amount to your taste. Recipe by Yuunatsumame

Ingredients

  1. 16Chicken wing mid section
  2. 1Salt and pepper
  3. 2 tbspKatakuriko
  4. sauce
  5. 2 tbspSake
  6. 2 tbspSoy sauce
  7. 1 tbspMirin
  8. 1 tbspHoney
  9. 1for garnishing White sesame seeds

Cooking Instructions

    Mix together all the sauce ingredients except for the sesame seeds. Microwave for about 30 seconds to melt the honey.

    Salt and pepper the chicken wings and leave to sit for 10 minutes. Coat them with katakuriko and shake off the excess. Drop into 150°C oil.

    Deep-fry the chicken wings in 150°C oil for 6 minutes at first. Turn up the heat to 190°C and deep-fry the chicken wings until crispy. Transfer the fried chicken wings straight to the marinade.

    Add the sesame seeds and mix well.

    For adults, sprinkle with plenty of black pepper.
