Cook the mushrooms in a non-stick pan without oil for about 10 minutes to drive off the moisture.

Put the onion, carrot, courgette and nuts in a food processor and process to a paste.

Put the paste in a large bowl and add the breadcrumbs, mushrooms, parley and Marmite. Season lightly if desired then mix well.

Form the mixture into either four burgers or eight sausages. Now either shallow fry in a little oil for 8 minutes, or cook under a hot grill for 8-10 minutes, turning just once.

Add 5 tblsp of water in to the 4 tblsp All-purpose flour to make a batter and keep aside.
Roll the each burger in to the 5 tblsp dry flour. Now dip in the flour batter, and roll the burger in to the 1 cup of breadcrumbs.
Shallow fry in a low to medium heat until they are golden-brown on both sides serve hot.

Normally the mixture should hold its shape well. If it doesn’t you may need to add a little flour or oatmeal.
