Crunchy Vegetarian Seafood Stir-fry / Pomme de Terres de la Mer

It's a meal I made with some bits and pieces I had lying around, as I wanted a lighter meal.
The roast potatoes are the main feature, and the potatoes and seeds add a nice, crunchy taste to the dish. I used a seaweed-flavoured seed mix.

Peel the potatoes and cut them into evenly sized pieces. Place them in the oven. Add seed mix over top of potatoes while they are cooking. Turn potatoes every ten minutes.

Add spaghetti to one pot and mixed vegetables to another pot. Cook.

Fry an egg in a small frying pan. Lightly cook until yolk is runny.

Serve roast potatoes, spaghetti, mixed vegetables, and runny egg together. Scoop out any loose seeds from the oven tray to add to meal. Drizzle oyster sauce generously. Add salt and pepper.
