An amazingly done comfort food or better still, soulful meal that is unparalleled both in terms of taste and looks. Simple yet elegant side dish to any meal. It is by all means a true comforting food with desi Ghee drizzled on top and some pickle of choice with steaming hot bowl of Rice or Rotis/Phulkas. It goes well with just anything and everything. And it has Paalak or Spinach Greens in it making it healthy and flavourful. And the best part is that it can be made on any day for routine meals. Spinach is a wonderful Leafy Green Vegetable full of nutritional benefits and not to forget Vitamins and Minerals especially Iron which is essential for maintaining our Haemoglobin levels in the body. Regular intake of it keeps Anaemia or Blood deficiency at bay. Feed this awesome Leafy Greens to your families and stay safe and healthy in these difficult times.

Steps

Wash and soak dal in about 2 cups of water. Add chopped Onions, Ginger garlic paste, Red Chilli and Turmeric powders. Also stir in chopped Tomatoes and the soaked and drained Dal to a Pressure Cooker.

Pressure cook on a high heat for about 8 whistles or as required. Add enough water to facilitate better cooking. Set aside until the pressure settles down on it's own.

Open the lid and allow it to simmer on a low heat. You can adjust the consistency accordingly. Also add some chopped Coriander Leaves and slit Green Chillies.

In the meantime, prepare the tempering. I have used Sun Dried Curd Chillies for the tempering unlike Dry Red Chillies in this dish. I usually do that for different types of Daal recipes that I make for my family. Add it to the cooked Daal. Adjust the amount of Salt. Garnish with some more of chopped Coriander Leaves. Serve it piping hot alongside Rice or Rotis. Yum!
