
Vegan Vanilla Ice Cream Gummies

Cooking Instructions

Chill half cup of almond milk
- 2
Sprinkle all six packets of Knox gelatin powder over 1 cup of unsweetened almond milk in a small saucepan
- 3
Mix in the Lakanto sweetener and stir until mostly Incorporated
- 4
Heat on medium low until gelatin is completely dissolved
- 5
Stir in half cup of chilled unsweetened almond milk and the two tablespoons of imitation French vanilla
- 6
Pour into measuring cup with a liquid spout. Use cup to pour into gelatin molds.

Refrigerate until solid. Add sprinkles if desired to the gummy molds with the liquid gelatin mixture.

I got the idea for this ice cream from Gemma Stafford of Bigger Bolder Baking on YouTube.You can also use homemade coconut milk. The measurement is the milk from 3 large coconuts. Pour the coconut milk in cups, cover and leave in the fridge for about 2 days.
