Steps

Firstly keep Cashews in freezer for 5-6 hours or overnight.
In the morning take it out. Claean and Crush Cashews into small pieces. Grind it till fine powder in pulse mode. - 2
Seave Cashews flour.
Now heat a kadhai, add sugar and water. Keep the flame on medium. - 3
Cook till sugar dissolve and the syrup becomes sticky.

Keep the flame on low.
Add cashew flour, combine flour with syrup very well to ensure there are no lumps. Add ghee and rose water. Continue to cook stirring well continuously and cook for 7-8 minutes or till the mixture becomes thicken.. - 5
Take out 1/4tsp of mixture and try to make a ball, if the mixture hold the shape of ball, its done turn off flame.
Keep string the mixture continuously, until it become thick like a dough.
Transfer the mixture to a butter paper or parchment paper. - 6
Knead the mixture with the help of parchment paper for 2 minutes or till mixture will become smooth as shown in pictures...

Roll it of 1/4inch thickness applying pressure all over evenly.
Place silver vark over it and cut it into pieces. Firstly cut straight, then cut diagonally. - 8
Keep this katli for an hour to be set completely. Kaju katli is ready to serve. Enjoy
