Cut the butter into thin slices. Place the sliced butter in a bowl and bring to room temperature.

Add powdered sugar to the butter and mix well.

Add the egg and mix some more.

Add sifted flour and almond powder, then mix some more. From here on, use a spatula.

Divide the dough in half. Add the cocoa powder to one portion and mix.

Wrap the dough in plastic wrap and let it sit in the fridge for at least 1 hour to settle.

Dust bread flour on a board and roll out the dough. Bread flour is not listed. If you don't have it on hand, use regular white flour instead.

Cut out your preferred shapes and bake your cookies in a preheated oven at 170℃ / 340℉ for about 13~16 minutes. Please adjust baking times accordingly!
