Ingredients

45 minutes
4 persons
  1. 8-10pav buns
  2. 2 tbspButter + for frying pav
  3. 1 tbspOil
  4. 1/2 tspJeera
  5. 2medium-size onions
  6. 1 tbspginger garlic paste
  7. 1/2 cupchopped bell peppers (green, red, yellow)
  8. 1 tspChili powder
  9. 1 tspCorinader powder
  10. 1 tspJeera powder
  11. 1/2 tspturmeric powder
  12. 2large tomatoes
  13. 2 tbspPav bhaji masala
  14. 8eggs
  15. to tastesalt
  16. 3-4 stalkscoriander leaves
  17. For fried egg :
  18. 1 tspbutter
  19. 4eggs
  20. to tastesalt
  21. as required Pav bhaji masala to sprinkle
  22. As neededCoriander leaves to sprinkle

Steps

  1. 1

    Boil 4 eggs, peel skin and keep aside until use.

    In a pan heat butter and oil. Add in jeera and let it splutter. Add finely chopped onions and saute onions are golden.

    Add in ginger garlic paste, finely chopped bell peppers and saute until raw smell goes away. Add in spice powders and saute for 30 sec.

    Add finely chopped tomatoes along with little salt and saute. Cover with lid and cook until tomatoes soften. With help of potato masher, mash the onion-tomato mixture well.

    Add in pav bhaji masala, salt and saute well. Break 4 eggs one by one in a bowl and add it to the pan.

    Scramble the eggs and saute until eggs are cooked well.

    Grate boiled eggs into the pan and mix. Check for salt and adjust. Finely garnish with chopped coriander leaves. Transfer to serving bowl.

    Spread butter on slit pav buns and fry them on tawa for few seconds.

    For fried-egg, heat a pan on medium flame and grease with butter. Break one egg at a time into a bowl and carefully add it to the pan. Sprinkle salt, pav bhaji masala, coriander leaves and cook for 2-3 minutes until egg white is cooked and yolk is firm. Place the fried egg on Anda Ghotala. Prepare remaining fried eggs.

    Serve Anda Ghotala with butter-fried pav buns, chopped onion and lemon wedges for brunch or dinner.
