Let's make syrup first. In a large pan add sugar, add water, cardamom powder, lemon juice and saffron, stir well and boil on medium flame of gas till sugar melts. Even after dissolving sugar, boil for 5 minutes for 1 string of syrup

Now let's make Jalebi batter. For this, add all-purpose flour, curd and ghee in a bowl and mash with bare hands.

Now add a little water in this mixer and mix well to make a smooth batter. Now add orange color and mix well. Then add baking soda and whisk well.

Now heat oil / ghee gas on medium flame for frying in a pan. Then fill the prepared batter in a piping bag or sauce bottle in hot oil / ghee and roll it on a medium flame of gas. Turn the jalebi on both sides and cook till it turns golden. Soak this jalebi in hot syrup for 1/2 second and remove to a plate. Make all the jalebi this way.

Now our kesar jalebi is ready to serve. Add the pistachio slices to the saffron jalebi and garnish.
