Ingredients

15 minutes
1-2 servings
  • 4large eggs
  • 1jalapeño
  • Handfulshitake mushrooms
  • SprigBroccolini
  • Small tomato
  • Grated manchego cheese
  • Olive oil, salt, pepper
  • 1/8 cupwater or even better white wine

Steps

15 minutes
  1. 1

    Assemble everything.

    Beat eggs with fork, season with salt and pepper.

    Saute pepper in almost dry pan to blister skin.

    Add oil, saute mushrooms.

    Add broccolini, coat with oil, add liquid and take off heat (cover, maybe?). Broccolini cooks on its own from the steam. Let cool a bit.

    Turn on broiler, add vegetables and cheese to egg, mix well.

    Add lots of oil to pan and get hot. Add egg mixture and scramble a bit... but not too much... Just until eggs are half cooked.

    Place under broiler until browned on top and eggs are cooked to your liking.

    Flip over on plate, cut, and serve with fresh tomatoes, drizzle of oil, salt, pepper,nor even salsa.
