Mix maida and all dry ingredients and then make a well and add curd and oil and mix well. Add water as needed and knead it into a soft dough. Cover and let it rest for about an hour.
Heat the tawa. Divide the dough into 5 parts or as desired. Flatten with the fingers and palm as much as you can and use a rolling pin to spread more as desired. Sprinkle dry flour as needed. Dab the rolled out dough with wet hands and sprinkle a pinch of Kalonji and cilantro as needed. - 2
Roll a rolling pin lightly so that everything sticks to it. Sprinkle some water on the hot tawa and place the kulcha. Cover it with a lid. Adjust flame accordingly so that it doesn't burn before it's fully cooked. Once bubble forms, remove the lid and with the help of steel turner flip the kulcha. Once it has browned little with the burnt marks, turn/ flip it again and with the turner press and cook on both sides, till it is evenly cooked.

Once done, add a dollop of butter on it and serve hot with chole or anything you like to eat it with it. Bon appetite!
