Cooking Instructions

Dissolve the shiratamako in a small amount of water and leave it to sit for a while.

Add the shiro-an to a heat-resistant container and use a tea strainer to strain in the shiratamako mixture.

Mix the paste together well and heat it up for 15 seconds in the microwave.
- 4
Take the paste out of the microwave, stir it with a spoon, then heat it up for a further 15 seconds.

Mix the paste well with the spoon and leave it to cool. Now you have a basic nerikiri. (Add any food colouring that you like here to change the colour.)

Form the koshi-an into a ball. (If you are using koshi-an that has a high water-content, please heat it in the microwave to evaporate some of the liquid away.) Wrap the koshi-an in the nerikiri paste and it's ready to serve.

This time I used blue, black, and red food colouring (all of which were natural colourings) to create a slime from the RPG series Dragon Quest.

Keeping the temperature constant is a pain. The temperature setting of the warming function is high, and I get the feeling that it is not so economical to leave the lid of the rice cooker open... My grandma used to make sweet rice sake by putting it in the bath. If you do it that way, the temperature will not be so high, so you could put it in a thermos and leave it overnight .Instead of using glutinous rice or rice porridge, you can make this with just rice malt. I usually keep it heated a little over 120F/50C. It was fine even when I was careless and let the temperature rise over 150F/65C. I added salt preserved cherry blossoms and dyed the rice pink with red food coloring to the usual ohagi. Fermented foods are supposed to be good for you, so I made this with amazake. It's a quick snack you can make for children.I used a concentrated amazake, so I diluted it to a drinkable state and used 120 g. If you use ramekins, cook the bread one at a time. In this case, I think it'd be good if you put something like bean paste in the center and top with something like amanatto (sweetened adzuki beans) or pickled cherry blossom petals. I used a ziploc container, but use whatever heatproof container you have. Microwave steamed bread will become hard when cooled, so be sure to eat it while still warm. I happened to know that I could make steamed sweet potato in a rice cooker, so I used that method to make daigaku imo.When you stir the sweet potatoes at the end, stir gently from the bottom with a ladle or a wooden spatula to combine with the syrup as if you are turning them upside down.
