If gravy made with bacon grease is wrong, I don't want to be right.
Cooking Instructions

Heat grease in medium-sized frying pan on medium-high heat.

Slowly whisk in flour to avoid lumps.

Once all flour is mixed in, slowly whisk in milk (about 1/2 cup at a time). Allow milk to get hot before adding more.

Once all milk is added, heat and whisk until gravy reaches desired thickness.

Salt and pepper to taste.

*Slowly whisk in more flour if too thin or more milk if too thick. I just eyeball the ingredients, but these measurements are really close. It took me a few tries years ago to get my gravy to perfection!

I buy whole cooked hams and slice for luncheon meat and portion out pieces for quick dinners. Since its cooked I need to just heat to serve, leaving me without pan drippings. I save my bacon fat and keep it in the refrigerator. Perfect when I need to use as in a gravy base. I don't cook up much so I use the olive oil to make the difference up. This is my original version, that I came up with after a bit of experimentation.Be sure not to take your eyes off the pan, keeping watch so that it doesn't burn. Other than that, it's easy.
