Birria

Birria is a traditional dish from the state of Jalisco, Mexico. It can be made with goat, lamb, beef, pork, or even chicken. I made it with pork because it turns out very juicy.

Birria is a traditional dish from the state of Jalisco, Mexico. It can be made with goat, lamb, beef, pork, or even chicken. I made it with pork because it turns out very juicy.

Place the pork and bay leaves in a pressure cooker and cover with water. After sealing, cook for about 40 minutes.

In a skillet or on a griddle, toast the chiles, being careful not to burn them, then remove. Next, roast the tomatoes, garlic, and onion, then remove. Toast the cinnamon stick and cumin seeds, then remove. Blend everything together with some of the water from cooking the meat.

Blend very well, strain the mixture into the pot with the meat and remaining water, add salt, and simmer for another 10 minutes.

Let cool and shred the meat.

Arrange the cilantro in a small bowl, onion in another, lettuce in another, oregano, and roasted, chopped serrano chile (to taste) so everyone can add what they like.

Serve hot with tostadas.
