I love to utilize left overs to create new dishes. Substitute meat with cheese or plant base ground meat substitute and make it a vegetarian dish.

Preheat oven at 350°degrees F

Spray your cooking pan and a square of foil with olive oil spray.

Cut the tops off the peppers. Remove and discard the stems, then finely chop the tops; set aside. Remove all seeds and hollow the inside of the bell peppers.

In a mixing bowl place the turkey or (cheese), rice, beans and cut up bell pepper tops. Then add the eggs and spices. Mix all together.

With a large spoon scoop and stuff each bell pepper and set inside the cooking dish.

Crush the croutons inside a napkin or place bread crumbs on a napkin. Pick up stuffed bell pepper and with meat facing down tap the napkin to pick up bread crumbs or crushed croutons. Then place bell pepper face up back into cooking pan.

Drizzle some olive oil on top of prepared bell peppers, add 1/2 cup water to bottom of cooking pan and cover with foil. If you have left over mix place in a smaller baking dish.

Place in oven for 35 mins. Then remove foil and finish baking for 10 mins.
