This is a pork version of a simmered soft chicken wing recipe I posted.If you use aluminum foil with a few holes, it can remove the scum and also works as a simple otoshibuta (drop-lid). Recipe by bvivid
Steps

Add the ● ingredients to a pot and bring to a boil. Cut the pork into 1 cm pieces and add to the pot. Cut out a piece of cooking paper or aluminium foil into the size of the pot and lay on top of the pork. Simmer for 30 minutes on low to medium heat.

Add mirin to the pot and simmer for another 10 minutes, and it's done.
