Ingredients

  1. 1/4 cupOlive Oil
  2. 2 cupCoarsely chopped, onions
  3. 1 lbHot Italian Sausage, cut into 1 inch lengths
  4. 1 lbSweet Italian Sausage, cut into 1 inch lengths
  5. 6 clovegarlic, minced
  6. 2 lbground beef chuck
  7. 2red bell peppers, cored, seeded and diced
  8. 3-35 oz cans plum tomatoes, drained
  9. 6jalapenos, cored-seeded and diced
  10. 1 cupchopped flat leaf parsley
  11. 2 tbsptomato paste
  12. 6 tbspchili powder
  13. 3 tbspground cumin
  14. 2 tbspdried oregano
  15. 1 tbspdried basil
  16. 2 tspsalt
  17. 1/2 tbspfennel seeds
  18. 2 tsppepper
  19. 2 lbroma tomatoes, quartered
  20. 1shredded jack cheese
  21. 1sour cream
  22. 1sliced scallions

Steps

  1. 1

    Preheat a large heavy skillet over medium heat, saute sausages till brown than drain

  2. 2

    Heat a dutch oven or heavy stockpot with oil over medium heat

  3. 3

    Add onions and garlic, cook 3-5 mins.

  4. 4

    Raise heat to med- high and crumble in ground chuck. cook till browned.

  5. 5

    add sausage, red peppers and jalapenos, cook 10 mins

  6. 6

    stir in canned tomatoes, parsley, tomato paste, all herbs and spices, cook 10 mins

  7. 7

    add fresh tomatoes, cook 10 mins.

  8. 8

    serve with jack cheese, sour cream & scallions
