King Trumpet & Shimeji Mushrooms Simmered in Sweet Soy Sauce

I had too many king trumpet and shimeji mushrooms and couldn't finish eating them all, so I made this boiled dish.

Steps

Cut the king trumpet mushrooms into 5 mm thick pieces. Tear the shimeji mushrooms into small bunches.

Place the mushrooms in the pressure cooker. Add the flavoring ingredients and mix.

Cover Step 2 with a lid and turn on the heat. Once the pressure has lifted, lower the heat to low and pressurize.

[The pressure cooking time is approximate] For a standard pressure cooker...about 3 minutes. For a high pressure cooker...about 1 minute.

Once pressurized, stop the heat. When the pressure has been released, open the lid.

Turn on the heat again without the lid and simmer for 3 minutes.

Let cool and transfer to an airtight container. Store in the refrigerator.
