Jerk Marinated Fullblood Wagyu Chuck Eye Steak with Mango Relish

  3. 1/2White Onion (diced)
  4. 1/2Mango (skin removed and diced)
  5. 1Kiwi (skin removed)
  6. 1Habanero (seeds removed)
  7. 1 OZGinger Root (peeled and minced)
  8. 3Green Onions (chopped)
  9. 3 SprigThyme
  10. 2 OZOlive Oil
  11. 2 OZApple Cider Vinegar
  12. 3 OZHoney
  13. 1/2 TSPFennel Seed
  14. 4Cloves
  15. 4Garlic Cloves
  16. 1Star Anise
  17. 1/2 TSPGround Cinnamon
  18. 1/2 TSPCumin Seed
  19. 1/2 TSPAllspice
  20. 2 TSPKosher Salt
  21. 1 TSPFreshly Ground Black Pepper
  22. 2Limes (juiced)
  23. Mango Relish
  24. 1/2Mango
  25. 2Green Onions
  26. 1Lime (juiced)
  27. 1Jalapeño (seeds removed)
  28. Kosher Salt & Freshly Ground Black Pepper (pinch/to taste)
  29. Optional Ingredients
  30. Fresh Cilantro
  31. White Rice
  32. Bibb Lettuce

Cooking Instructions

    PREPARING THE JERK MARINADE
    Place fennel, star anise, clove, cumin seed, allspice, and cinnamon in a small pan. Place the pan over the stove on medi-um heat. Constantly moving the pan over the heat, cook the spices until they become fragrant. This takes around 3 minutes. Re-move from heat

    Place the cooked spices and remaining jerk marinade ingredients (onions, mango, kiwi, habanero, ginger root, thyme, olive oil, apple cider vinegar, honey, cloves, garlic cloves, lime juice, kosher salt, and freshly ground pepper) in a food processor or blender.Note: For a less spicy marinade, only use half of a habanero. Blend ingredients until a smooth consistency.Pour the marinade over the Fullblood Wagyu chuck eye steak in a casserole dish or in a Ziploc bag.

    Ensure the marinade is covering the entire steak.Refrigerate, and let the chuck eye steak marinade for at least 6 hours. The apple cider vinegar and enzymes in the kiwi with help break down the collagen in the steak, resulting in an even more tender cut

    PREPARING THE MANGO RELISH
    For the relish, peel and dice the remaining half of the mango. Slice the green onion, and dice the jalapeño.Mix the diced mango, jalapeño, and green onion together. Add the juice of one lime.Season with kosher salt and freshly ground black pepper.

    FINAL STEPS
    Remove the Fullblood Wagyu chuck eye steak from the marinade. Do not rinse it off. Place steak on a hot charcoal or propane grill. Cook until an internal temperature of 120 degrees Fahrenheit for rare fin-ish. For a medium-rare finish, cook to an internal temperature of 130-135 degrees Fahrenheit. Let the steak rest at room temperature for 10 minutes. Slice the steak against the grain, and top with mango relish.Sprinkle fresh cilantro on top, serve with bibb lettuce or rice
