My Zuchinni, Squash and Tomato Pasta Salad

Ingredients

  1. 1/2 boxpenne pasta
  2. 1-2zucchini(s)
  3. 1-2yellow squash
  4. 1 (10 oz)tub cherubs tomatoes, sliced
  5. 1orange bell pepper, sliced vertically
  6. 20sliced tamed jalapenos from jar
  7. 3green onions
  8. My Vinegtette Dressing:
  9. 1/3 cupolive oil
  10. 1/3 cupred wine vinegar
  11. 1 tbsphoney
  12. 2 tspDijon mustard
  13. 1 1/2 tspgarlic powder
  14. 1 tspdried basil
  15. 1 tspdried parsley
  16. 1 tspsalt
  17. 1/2 tspblack pepper

Cooking Instructions

    Pre heat oven to 425 degrees.

    Boil pasta to al dente.

  3. 3

    After slicing and dicing veggies add the zucchini, squash and bell pepper to medium bowl and toss with olive oil and dash of salt. On large sheet pan spread out veggies. Bake for 30 minutes or more to your liking if you want your veggies extra crispy.

    Meanwhile, cut up tomatoes and jalapenos and green onions.

    Once pasta is done rinse with cold water.

    In medium bowl add pasta and all the veggies and vinegtette dressing, toss and serve.
    Add some cheese and black olives if desired.
