Palak paneer is a classic ,delicious & healthy North Indian cuisine made from fresh spinach, spices & paneer/ cottage cheese.
Cooking Instructions

In a kadai with boiling water & little salt blanch the spinach leaves for 2,3 mints until wilted.

Take them out & put them in ice cold water.This helps the leaves to retaining their green colour.

To a blender add the blanched spinach along with tomato, 2 cloves of garlic, chopped ginger & green chilli.

Puree to a smooth paste & set aside.

Heat a kadai on medium heat, add oil & then add the remaining 2 cloves of chopped garlic & chopped onions until soft & translucent.

Add the prepared spinach puree & mix.Add around 1/2 cup warm water,cover with a lid & cook for 10 mints on medium heat.

Once the spinach is cooked,add red chilli powder,ginger,garlic paste,garam masala, turmeric powder,salt, mix & cook for 1 mint.

Add 1 tsp sugar & then add the heavy creame & mix.

Add the paneer cubes & mix.Let the curry simmer for 3-4 mints.

Switch off the flame.Add 1 tsp butter. Serve the palak paneer hot with naan, roti or rice.

Our favorite restaurant was Pakeeza's at Right Angle in Seksyen 14, which is still there and it’s my turn now to take him and my mum whenever I visit home.
