I have seasoned and had this catfish in my freezer for up to a week now and i was longing for fried fish and decided why not! And i can tell you this here should be a big deal abeg!

It was really nice and the skin stayed crunchy all through until i was down to the last bite.
Although, this is river caught catfish that does not smell at all compared to the farmed one with all the smell.

1 kgfresh cat fish
Salt
Seasoning powder
Blended ginger and garlic
1 tablespoonOlive oil
1 teaspoonLemon juice
For the sauce
10scotch bonnet peppers
Olive oil
Seasoning

Cut and clean the cat fish properly
Then mix all ingredients listed above in a bowl to form a lite paste.

Then make some slant lines on fish and rub on the mixed spices

Then wrap in cling film or foil and keep in the fridge to marinate for 4-5 hrs

Then deep fry

For the sauce, boil the pepper and onion together in a pot until tender then blend to smooth paste and add olive oil and seasoning.
