Chop the onion and bell pepper into small pieces and cook them in a skillet.

When they’re halfway cooked, add the chicken breast, cut into very small cubes.

Season everything with salt and black pepper. Let it cook, and when the chicken is done, add 1/2 cup water (about 120 ml) and let it evaporate.

Transfer the mixture to a plate. In the same skillet, place a flour tortilla, then add the chicken mixture on top, sprinkle with some shredded cheese, and cover with another tortilla.

Cook for about 1 minute on one side, then use a plate to flip the quesadilla and cook the other side until done. Your quesadilla is ready to serve.
