Ingredients

  1. Mashed boiled potatoes 3 medium
    Jeera Aloo
  2. 1 cupGrated paneer
    Chocolate Mango Cheesecake
  3. 1/2 cupMashed boiled peas
  4. Grated carrot 1 medium
  5. 1/2 cupFinely chopped capsicum
    Italian Cheesy Veggie Pizza
  6. 1/4 cupFinely chopped cabbage
  7. 1/4 cupFinely chopped beans
  8. Chopped onion 1 medium
  9. 1Chopped tomato
  10. 1 tablespoonGinger garlic paste
  11. 1 tspCumin seeds
  12. 1/2 tspHing
  13. 1 tablespoonCoriander powder
  14. 1/2 tablespoonRed chilli powder
  15. 1 tspAamchur powder
  16. 1 tspGaram masala
  17. 1 tspKitchen king masala
  18. 1 tablespoonLemon juice
  19. 2 tablespoonsbutter
  20. 2 tablespoonscooking oil and some more to shallow fry
  21. Chopped coriander leaves 1 tablespoon
  22. To serve
  23. Grated cheese
  24. Green chutney
  25. Tamarind and dates chutney
  26. Tomato ketchup
  27. 1/4 cupVeg. Mayonnaise sauce
  28. Large half cooked wheat rotis or tortillas 6
  29. 1 tablespoonCooking oil
  30. Water to sprinkle

Steps

30 minutes
  1. 1

    First, heat up oil in a pan and splutter cumin seeds.

  2. 2

    Then add onions, ginger garlic paste and saute well. Then add one by one all the vegetables and saute well.

    Add salt, spices and cook on medium flame till veggies are cooked and slightly crunchy. Stir in mashes potatoes, paneer, and cook well.

    Now adjust seasoning, add chopped coriander leaves, lemon juice and mix well. Cool this mixture.

    Make small croquettes and roll in fine sooji. Shallow fry on oil in a pan and drain on kitchen paper.(Alternatively you can just use the mixture within frying as a healthy option as I did.)

    Now to assemble the Kathi Roll: heat a skillet or tawa.
    Add oil. Place the half cooked roti with cooked side up. Spread your choice of chutney on top. Then spread Mayonnaise sauce on top.

    Place the vegetable roll and sprinkle chopped onion, cabbage, cheese and roll up tightly.

    Then tawa roast both the sides till crisp. Then roll in a butter paper wrap. Serve immediately with green chutney, ketchup and enjoy!
