Dahi Baingan with roasted cumins powder

I was reluctant to eat brinjal in my childhood. My mother found out the way to develop interest to eat all kinds of veggies including brinjal.
I love this preparation of brinjal, my mother used to add curry leaves, roasted cumin powder and curd. All the ingredients are my favorite.

Wash and chop brinjals. Mix sugar with curd.

Heat oil. Add mustard seeds to splutter, then hing, curry leaves and green chilli. Saute for 30 seconds.

Add chopped brinjal, turmeric and salt. Cook, covered till cooked.

Bring down to wok and mix curd and ensure well coating.

Transfer to serving bowl. Garnish with roasted cumin powder and pomegranate arils. Serve with hot rice/roti.
