This is an instant pickle that can be prepared in 10 minutes ..
Steps

Wash carrots, peel off, cut into lengthwise thin finger wedges..
Spread on a kitchen towel to dry thoroughly. - 2
Add mustard seeds in a small grinder jar.
Don't make fine powder, we need coarsely grinded mustard seeds.. So grind on the pulse button on and off. - 3
Take a bowl, add dried carrots finger wedges, add salt, grinded mustard seeds, hing, turmeric powder, red chilli powder, and mustard oil.

Mix well, till all carrot wedges coat perfectly.
Keep aside for 10 minutes to enhance its taste and flavor. - 5
Ready to serve instant pickle, enjoy with puri, roti, naan, or even with rice, and khichdi also.
