10filets Yellowtail amberjack
2 tbspOil
3 tbspPlain flour
2 tbsp●Sugar
2 tbsp●Sake
2 1/2 tbsp●soy sauce
1 tbsp●Mirin
1/2 tsp●Grated ginger

Put the fish pieces in a plastic bag, add the flour and shake.

Pan fry the floured fish in oil. When it's browned, add all the ● ingredients, simmer until the sauce is glossy, and it's done.
