Very Filling Minestrone

Minestrone is the ultimate tomato flavored soup!
I wanted to add lots of vegetables so that the soup would fill me up, and made this.
Just add tons of vegetables!!

Cut the vegetables into small dices. Spring cabbage is nice in the spring.

Add the garlic to a generous amount of olive oil. Start sautéing the vegetables, starting with the harder ones and adding the softer ones later.

Season the vegetables properly with salt and pepper at this stage!

When the vegetables are more or less cooked...add enough water to cover as well as the ☆ ingredients, and simmer!

Simmer for a while, skim off any scum. Add the ★ ingredents and keep simmering over low heat. (About 30 minutes.)

When the vegetables are tender, the soup is done!! It has lots of vegetables, so the soup alone will fill you up.

We enjoyed the soup as 'soup pasta' the next day. Top with cheese of your choice!
