For this recipe, I mostly eyeballed the amounts—especially for the spices and olives. Trust your instincts and adjust to your taste.

In a pot with olive oil, brown the chicken drumsticks for a few minutes until lightly golden.

Add the chopped onion, paprika, curry powder, garlic, tomato paste, and fresh tomato. Pour in enough water to cover the chicken.

Cover and cook for 10 minutes.

Add the potatoes, cut into pieces, and black pepper. Simmer for 20 minutes.

After 20 minutes, add the olives and simmer for another 5 minutes.

Serve this stew with rice, couscous, or any side you like.
