Coconut Chicken

Clean and cut the chicken breast into cubes.

Put in a pot and add, salt, black pepper, cardamom powder, cinnamon powder, curry powder and a tablespoon of cooking oil, mix in with the chicken cover and let it rest for 30 minutes.

After 30 minutes, boil the chicken and set aside once the chicken is cooked.

In a separate pan, fry the sliced onions.

Add in the blended tomatoes and cook

Once cooked add in the tomato paste and cook for a few minutes.

Next add I half cup of coconut milk and allow to simmer for a few minutes.

Add in the pre-cooked chicken mix in well

Then add in the remaining half cup of coconut milk, reduce heat and let it simmer on low heat.

Finish with chopped coriander and serve with desired acidity accompaniment. Enjoy!
