Banh Hoi with Crispy Pork Belly

For the crispy pork belly, you can refer to the recipe here.

Buy banh hoi rice vermicelli sheets at the supermarket. Soak them in cold water for 1-2 minutes to separate, then steam for 5 minutes.

Save the pork fat drippings from roasting to sauté the green onions for scallion oil. Season with 1/2 teaspoon (2.5 ml) seasoning powder for extra flavor.

Make the sweet and sour fish sauce following the recipe here.

Cut the carrot and cucumber into bite-sized pieces. Arrange on a plate with lettuce and cherry tomatoes. Wrap with the pork for a delicious bite.
